About Annabelle

After mainly cooking my way through university where I studied History of Art, I trained as a chef at Ballymaloe, a renowned cookery school based on an organic farm in Ireland. This led to a role as the head chef for a catering company in London, racing around town cooking for all sorts of events. After a couple of years, fuelled mostly on canapés and adrenaline I felt burnt out, with lacklustre skin and digestive issues. Deciding to take a break to learn how food could be used to impact positively on one’s health I enrolled part time on a diploma course in nutritional therapy at CNM. I now continue to cook for private clients and develop and style my own health-centric recipes for content and clients.

 

My 5 food principles (caveat: where possible!)

 1.     Cook from scratch

2.     Eat seasonally (and don’t let this be limiting - the freezer is your best friend, providing you with summer berries and veg in the depths of winter!)

3.     Eat the best quality food you can afford

4.     Eat mostly plants, this will help with no.3

5.     Leafy greens are worth their weight in gold – wilt spinach with garlic and drizzle in olive oil for a side at breakfast, whizz them into smoothies and soups, and hide in pestos & juices for children.

Mildred’s or The Gate for reliable veggie fair, The Palomar, Soho for a middle-eastern treat, The Ivy Chelsea Garden for their veggie ‘full english’, Dishoom for eating your weight in delicious, and generally veg-centric, Indian food, my local caffeine haunt the Ground Coffee Society (the best oat mylk cappuccino always!) and Store Street Espresso for the most decent matcha latte I’ve found plus incredible matcha cookies. Outside London: The Horseguards Inn, Petworth & The Wellington Arms, Baughurst: both excellent country pubs with menus based around the seasons. The Black Swan, Oldstead for veggie-focused, innovative Michelin Star food.
